Continuing to Recover

Just a quick note to let you all know that Donna is continuing to recover fantastically! She got her hair cut this morning and says she really "feels like a new woman"!  She is walking every day with Abby(the dog). Today she walked all the way to - and around the nearby park! Next week she has local Dr. appointments to set up consultants and future physical and speech therapy.  Those appointments should keep her busy and out of trouble! Visitors have managed to be staggered so that she can nap when she needs to.  Thank you all for your cooperation and consideration! 

Thank you to all that have brought a wide variety of fantastic foods, as well as those that have made commitments for future meals! It is so heartwarming to see the camaraderie of friends, co-workers and community members coming together in support of Donna and Louie.  I would also like to acknowledge and thank Lorrie Conley (graviollyx14@live.com) that is helping Deana Coburn coordinate meals.

    2) For all those wonderful and dedicated chefs and culinary angels who are making meals for my Mom: I am what most in Visalia would consider a "Health Nut!" (Imagine me sitting in an organic garden in the woods with butterflies, bees, birds, rainbows, bubbles, bells and Light surrounding me...yes, that's the feeling, take a deep breath....and..exhale...ahhh.. :) Ok, now you're on the page with me...

    Really though, what I want to share is that I have dedicated a good amount of my free time to researching and understanding the effects of diet and nutrition on the overall human condition.

    Countless experts have continuously touted the undeniable benefits of plant foods, and the most cutting edge information reveals that through significant heating, nearly all of the healthful enzymatic properties and essential minerals in the vegetables are destroyed.

    In short, raw, uncooked fruits and vegetables are the most effective way for the human body to get the primary nutrients it requires [and desires] for healing, rejuvenation, and proper functioning.

    My request is that the meals that are prepared for my Mom, especially during this crucial healing time, include fresh fruits and vegetables (preferably organic and locally grown, but, hey, I'm not gonna push it too much here :). Keeping in mind the health information that is now available to the public about the significant healing properties of plant foods, it would be ideal for her continued health and well-being if each meal could include at least some uncooked fruits and vegetables.

    I find it is best prepared in ways we all know and love:

    1) Sliced fruit with toppings or dips (peanut or sunflower seed butters, cinnamon, coconut or other favorites)

    2) Chopped veggies with favorite dips (salad dressing, hummus, salsa, pate)

    3) Colorful salads

    4) Creative "coleslaws" (red cabbage, shredded carrots and beets, cilantro, sweet corn, bell peppers...Be creative! Think COLOR! The nutrients are in the rainbow!)

    5) Blended treats such as smoothies, soups, or fruit puddings.

    6) I would like to add that dark, leafy, green vegetables (kale, broccoli, spinach, chard) have been found to be the most nutrient-rich foods on the planet.

  2. Hi Honey, this is your mom. I just wanted to say thank you for all of your information. When you come visit me, you can show me a few things. Right now people are cooking me so much ymmy food to help fatten me up. I went shopping and bought some new pants, they are sizes 4 and 6. Right now all I can do eat, eat, eat! Hi everyone, it is so great to be home!!!

  3. It was great seeing Donna, Louie and Suzanne in Visalia this weekend on Saturda. We all sat outside by the pool and enjoyed the sun and fresh air. Donna is talking away and looks fabulous, eventhough she is really skinny. She didn't need to lose any weight anyway so this is what you call thin. My good friend Joann Kramer and her mother Francis went to visit Donna on Saturday also and took some delicious homemade and healthy muffins. How nice it is to hear Donna laughing and enjoying life! Donna expressed how she is so overwhelmed by all the cards and caring people as she didn't expect such a grand response. Well, Donna, now you know how much you have touched so many lives and it is our turn to do something for you, whether it be to cook, visit or say prayers for your full recovery. We all love you, Carolyn

  4. Kirsten, thank you so much for your kind words. I seem to have inherited a whole new family from my relationship with your mom! I have tried to reassure everyone that your mom has gained much physical and mental strength as she continues on her recovery journey. Her main issue is getting her thoughts out - by talking and writing. She is very capable, as you know from your phone conversations, of making it work and quite expressive. She is quite capable of making her own decisions, including when it comes to her diet choices. She has been given full reign regarding her foods from the many doctors in Memphis. Although we all know that a diet high in saturated fats is not healthy - she really needs to have a variety of foods including protein, grains and vegetables(including dark green leafy etc) and fruits. I have seen the upcoming meals as planned by Deana and Lorrie and prepared by all the fantastic friends and colleagues. There appears to be a broad range. And, as you know, springtime in the valley means many fresh fruits and vegetables abound. I can appreciate your suggestions for organic,fresh foods. I am a pioneer "health nut" myself. I understand there are new approaches to vegetarian, vegan, macrobiotic diets. However, when people are helping out of the kindness of their hearts, I believe it is asking too much to not only suggest a particular diet, but how it should be prepared. Nor has your Mom made those choices regarding her diet. Some of your suggestions are very good - perhaps someone will use them. I realize that your ideas come from the heart. I just really wouldn't hold my breath for many of them coming to fruition.
